Marilyn’s Velvety Chocolate Cake

Here is Marilyn Willis’ recipe for velvety chocolate cake. Thanks for celebrating Marilyn’s 40 years at Christian Homes & Family Services with us!

VELVETY CHOCOLATE CAKE

Mix together and set aside:
• ½ cup buttermilk
• 1 teaspoon baking soda

Sift together:
• 2 cups flour
• 2 cups sugar
• ¼ teaspoon salt

Bright to boil:
• ½ cup butter
• 1 cup water
• 4 tablespoons cocoa

Pour chocolate mixture into dry ingredients and mix together thoroughly using a wire whisk.  Let cool for about 5 to 10 minutes.

Add 2 beaten eggs, the buttermilk mixture, and 1 teaspoon vanilla.  Mix thoroughly.

Pour into 2 greased and floured 8-inch pans. (NOTE:  I just spray the pan lightly with Pam if I’m not going to make a layer cake.)

Bake at 350 degrees for 25 to 30 minutes.

 

VELVETY CHOCOLATE FROSTING

½ cup butter
¼ cup plus 2 tablespoons milk
4 tablespoons cocoa (sifted) (It prevents those little dark specks that sometimes appear.)
1 (16-oz) package powdered sugar (sifted)
1 teaspoon vanilla

Combine butter, milk and cocoa in a saucepan; bring to a boil.  Remove from heat and add powdered sugar and vanilla; mixing well. (I use a hand mixer).
Spread warm frosting on cooled cake.

*This can also be baked in a 9×13 pan or made into cupcakes. Just adjust your time as needed.
